Choosing the manner in which stone will be finished is an integral part of the selection process. Finish can be anything from saw cut to high polish. A high polish will bring out the color of the stone to its fullest, because it will optimally reflect the light. Conversely, a textured finish will always appear lighter. Stones for kitchen and lavatory tops should be chosen with regard to functionality. Foods and their handling will affect long-term appearance as acids and grease come in contact with the surface. Not all stones are resistant to staining; therefore, selection should be carefully considered. In all cases and regardless of the type of stone, spills should be wiped up immediately and cutting knives not used directly on the surfaces. There are also nontoxic sealers (necessary in food preparation areas) that can improve the performance of a stone to a great degree.
